Skinny Crock Pot Pulled Pork

I remember when I first decided I was going to meet my health and fitness goals no matter what.  I discovered nutrition was the key, but meal prepping was sooo overwhelming!

However, I couldn’t stay on track with what I was trying to accomplish without it. Creating recipes like this Skinny Crock Pot Pulled Pork was my saving grace. This easy crock pot recipe used pork tenderloin instead of the traditional pork butt, saving you 18 grams of fat and several hundred calories.  By making your own sauce, you skip high sugar bottled sauces with preservatives.

Smoky Barbeque seasoning for skinny crock pot pulled pork

I think the key to any recipe is layering flavor.  The night before, I placed two one pound pork tenderloins in a ziploc bag along with ¼ cup of the barbeque seasoning, apple cider vinegar and avocado oil as a marinade.  The next morning, I dumped it all in my slow cooker.  I then chopped an onion, pressed some garlic, added the rest of the spices and microwaved the onion under tender.  It’s a trick I learned from America’s Test Kitchen Slow Cooker Revolution cookbook.  Then I made a quick sauce with chicken broth (to keep it skinny!), mustard, brown sugar and Worcestershire sauce.

Just add that all to the slow cooker, set it for 7 hours on low and forget it!  Once it’s done, remove the meat, shred and season with leftover cooking liquid from the crock pot.  I made a pulled pork sandwich and topped with another local find, Hayley’s Chipolte Agave Sauce.

After 15 minutes prep time, you will have a lean protein you can add to sandwiches, salads or just on it’s own!
